The Daughter of the Alps apple, official sponsor of the Race, celebrated its 30th anniversary with an international creative contest. The 3-Michelin-Star chef, Norbert Niederkofler, reinterprets the best recipes to offer you top-level dishes.

The five Marlene® varieties (Golden Delicious, Fuji, Royal Gala, Red Delicious and Granny Smith) arrive at the 2026 edition of the Pink Tide as an undeniable source not only of flavor, but also of inspiration.

In the recent international contest Marlene® celebrates 30 years, with which it celebrated its thirtieth anniversary, the Daughter of the Alps encouraged thousands of people to link flavor, territory, passion and emotion through different artistic proposals. A contest that recognized the creativity of participants in four categories: Art, Cooking, Music and Literature.

The best recipes have impressed an international panel of experts for their ability to combine flavor, aromas, textures, creativity and passion. Now, chef Norbert Niederkofler, 3 Michelin Stars, reinterprets some of the best recipes from the contest to give them a very top touch. Niederkofler offers healthy and simple dishes, such as this one: Veal tongue with apple-glazed shallots. A recipe inspired by the competing idea: Low-temperature rib with mashed potatoes, confit shallots and crispy apple.

Veal tongue is a protein-rich meat, perfect for those who train daily or are preparing for the big event in Gijón on June 21. A recipe full of flavor and nutrients, easy to prepare and with that special note on the palate from the Fuji Marlene® variety: crisp, firm, juicy, sweet and aromatic. Very few ingredients are needed to create this signature dish: veal tongue, celery, carrot, onion, Marlene® Fuji apples, shallot onions, butter, garlic, apple vinegar and aromatic herbs.
